Defining the Modern Flavoured Brew: Yonder’s Place in UK History
From Wild Ales to Pastry Sours
Historically, "flavoured beer" in the UK was often looked down upon, viewed as a gimmick. However, the craft beer revolution changed that perception by focusing on quality ingredients.
Yonder emerged at a pivotal moment in this timeline. With our founders' background at Wild Beer Co (pioneers of using local ingredients), we helped bridge the gap between "serious" barrel-aging and the modern "hype" beer scene. We took the rigorous techniques of mixed fermentation and applied them to fun, nostalgic flavour profiles.
Leading the "Pastry" Revolution
We were among the first in the UK to fully embrace the "Pastry" category without compromising on brewing integrity. By treating a Lemon Drizzle Sour or a Tiramisu Stout with the same technical respect as a traditional Porter, we helped legitimise flavoured brews. We proved that a beer could taste exactly like a dessert and still be a technically flawless brewing achievement.
