There’s a funny thing about reputation...

At Yonder, most people know us for our sours. Fruited sours. Pastry sours. And, more recently, pastry stouts and flavour-forward dark beers. And we love that — we’ve put a lot of time, care and creativity into those styles, and we’re proud of what they’ve become.

But here’s the part we don’t shout about enough:

They’ve been there quietly in the background. Sitting in fridges, flowing through taps, doing what good pale ales are supposed to do — being drunk, enjoyed, and ordered again and again. No drama. No fanfare. Just solid, balanced, drinkable beer.

So with STEEZ, we decided it was time to talk about it.

What is STEEZ?

Steez is a portmanteau — a blend of the words style and ease. It’s slang for something that looks effortless but is anything but accidental.

It’s the art of making complexity feel natural. The kind of thing that’s been practised, refined and hardwired over years, so when you see it done well, it feels almost simple. Simple enough to make you think, I could probably do that, right up until you try… and realise just how much work sits beneath the surface.

That felt bang on for this beer.

Because a really good pale ale isn’t loud. It doesn’t need to be. But it does need balance. And balance might look effortless… but its hard-earned.

Steez is our take on a modern pale ale / hazy pale / session IPA. Brewed to be easy-going, but never boring. The kind of beer you can drink two or three of without thinking… until you stop and realise how good it actually is.

Making It Look Easy

We were talking as a team recently about how people didn’t always know us for stouts either. That only changed once we started putting them out into the world and actually talking about them.

The same is true here.

We’ve been brewing for a long time now. We’ve worked with wild fermentation, mixed cultures, heavy fruit loads, high-risk ingredients and styles that are far harder to tame than a pale ale. That experience teaches you restraint. It teaches you when not to push.

So, while “easy” might be the wrong word, brewing something like Steez is very much about doing what we know how to do best:

Balancing malt, hops, yeast… and drinkability.

Even in our most playful or indulgent beers, drinkability has always mattered to us. Steez is that philosophy, stripped back and sharpened.

What's in the glass?

Steez pours soft and hazy, with a gentle glow. The body is smooth and rounded, thanks to a grist built for mouth-feel as much as flavour:

  • Extra Pale Barley Malt as the backbone
  • Porridge Oats and wheat for softness and body
  • Dextrin Malt for an extra fullness
  • Munich-style Malt for a subtle, biscuity balance

All brewed with water drawn from our private Mendip spring borehole here in Somerset.
Naturally filtered through limestone, and a huge part of our house character.

On the hop side, we’ve kept things modern and expressive without tipping into overload:

  • Citra for a bright citrus lift
  • Mosaic for depth and juicy complexity
  • Nelson Sauvin bringing a subtle white grape edge

A New England–style hazy yeast holds those hop flavours in suspension, keeping everything soft, juicy and integrated rather than sharp or aggressive.

At 4.2% ABV, this is firmly sessionable, but never thin.

A Pale Ale For People With... Well, Steez

Steez isn’t about shouting. It’s about quiet confidence.

It’s for people who care about quality, flavour and balance, but don’t need to announce it. People who know what they like, trust their taste, and value things that are well made.

In that sense, it fits perfectly with what we’re trying to do across the whole Yonder range:

Flavour-first beers that connect people, reward curiosity, and keep you coming back for another sip.

The feedback so far has been incredible. The recipe builds on previous brews we’ve loved (including our award-winning pale ale Boosh) refined, tightened, and brought into sharp focus.

  • No gimmicks.
  • No over-complication.
  • Just a bloody good pale ale.

Steez launches this January, with its first pour on Friday 23rd January 2026, and will be rolling out across all channels, including:
